Overview

The name of the restaurant, Silvester’s, is a nod to the location’s heritage. The space the Sydney Harbour Marriott now occupies was once a shop-front for the ‘Silvester Brothers’ one of Sydney’s earliest and most respected butchers and provision merchants.

The spectacularly designed Silvester’s flows on from the beautiful marbled lobby area, and is visible from a number of floors above. The new 120 seat restaurant will pay tribute to its early heritage by creating a wholesome relaxed atmosphere with earthy tones, artisan crockery and with an open kitchen allowing guests a front-row seat to the action so that they can experience the passion and theatre that goes into the creation of each dish. Like with every good dish, there is also a special ingredient. French born and Institut de Paul Bocuse trained Raphael Szurek will join as Head Chef bringing his extensive experience of working throughout Asia including The Ritz Carlton Guangzhou and The Canton Tower in China and most recently at the Marriott, Hanoi.

Allowing quality, local produce to be the hero, Szurek plans to bring his classic French training overlaid with multicultural influences to the Silvesters’s contemporary Australian menu which features dishes including Yellow Fin Tuna Tataki, Local Beets and Wagu Beef Tartar to start and Cone Bay Barramundi, Free Range Spatchcock and Byron Bay Berkshire Pork Belly for mains. For guests after a communal style dining experience, Silvester’s also serves a sharing menu including Coffin Bay Pacific Oysters, Vannella Burrata and Darling Downs Gringe Beef Eye Fillet. With my passion for fresh, quality produce, Silvester’s at Sydney Harbour Marriott was the perfect fit for me.
